Gandrayani ( Angelica Glauca) is one of the most unexplored Uttarakhandi Food Ingredient ". It is an aromatic root and has a distinct aroma. A medicinal herb, it increases appetite and is used to cure stomach ailments.

Gandrayani grows in the wild in the high remote Uttarakhand Himalayas range between 2700-3400 m of altitude and harvested during summer months by locals once the snow melts.
